At Antonio's mill, located at 1,200 meters, ripe cherries are carefully selected, fermented for up to 14 hours, and dried in the warm climate. Antonio’s expertise ensures consistent quality through every stage, from harvest to drying.
The cherries are soaked, cleaned, and dried on raised beds for about 20 days, with frequent turning for even drying. Final milling in Fraijanes ensures the coffee is sorted, bagged, and prepared for export, maintaining high quality through an environmentally-conscious process.
